Cellar at the bottom of the sea for wines from Heraklion At a depth of 25 meters
At the bottom of the sea at a depth of 25 meters, there are already five thousand bottles of wine from the Heraklion Agricultural Cooperatives Association (EASI), which, in cooperation with the businessman-entrepreneur Manolis Voutsalas, is attempting to create a new product of the Cretan vineyard, which will be called Navagio.
This is a method of aging that is being applied for the first time in Crete and aims to highlight the exceptional quality characteristics of Cretan wine through this type of aging.
The whole project starts from the fact that we want to do other things in relation to the Cretan vineyard. We submerged these bottles with mandilari and kombucha varieties to see what the results would be. I estimate that at the end of this experimental effort, a new and special product will emerge, said the president of the Heraklion Association, Stavros Gavalas, who explained that these bottles, when they are retrieved from the seabed next August, will be given away for free so that those who love wine can taste the result.
This practice is being followed in other regions and so far what we know is that it is yielding significant results, said Myros Hiletzakis, vice president of the Heraklion Association, who added that the constant temperature combined with the lack of oxygen at the depth at which they were placed creates an ideal environment for wine aging.
The entrepreneur-diver Manolis Voutsalas, who had attempted to submerge some bottles himself, having talked to a French diver who has been doing it for a long time, referred to the excellent result obtained from this way of maturing the wine, stressing that the bottle, having gathered around it organisms of the deep, acquires a special beauty beyond its content.
The vice president of EASI, however, explained that the impressions of those who will taste the wine next August, will also weigh their next moves, focusing on the increasingly high quality production of wines that further highlight the Cretan vineyard.
