It is with great pleasure that I welcome the "Karolou" Festival, an institution organized for the first time by the Community of Tersefanos and aimed at promoting the rich tradition, gastronomy and cultural heritage of the Community.
The snail is a unique edible delicacy of the region, which has become a central element of the gastronomic identity of the local community. Our ancestors used to collect snails from the fields which they saw as a nutritious, tasty and easily harvested food.
This gastronomic pleasure, passed down from generation to generation, is even more appreciated today. Proof of this is the fact that the menus of most Cypriot restaurants do not omit a recipe with snails. The consumption of snails in this region is not only a gastronomic choice, but a part of the cultural identity, integrated in the traditional cooking methods and local heritage.
It is widely known that the collection and sale of snails provides our farmers with additional income and contributes to the quality of life of our citizens. However, in order for this activity to be passed on to future generations, free harvesting from the wild should always be done prudently, in order to ensure the preservation of the wild snail population.
Ladies and gentlemen,
The promotion of local products and traditions is a key factor in promoting the development and progress of our countryside.
I would like to take this opportunity to assure you that the Ministry of Agriculture, Rural Development and Environment and the Government in general will continue to support in every possible way such initiatives that enhance local development and the culture of our place.
Through horizontal policies in all areas of governance, we work with the people of our countryside in mind, but also with the continuous improvement of the standard of living of our citizens. Only in this way will we prevent urbanization and abandonment of agricultural land.
In closing my brief address, I would like to thank the Tercefano Community Council for the kind invitation to attend and sponsor today's event, which I hope will emerge as an institution that will continue to develop and promote local culture and traditions.

Congratulations are certainly due to all those who contributed to the success of this event, which proves once again the love of rural residents for their place, but also their will to progress and promote their traditional products.
